In this video, Betty demonstrates how to make a luscious Light Lemon Pie. I substituted low fat/low sugar substitutes for almost every ingredient in this pie, yet it tastes indulgent and scrumptious! This is a great dessert if you are watching fat/sugar/calories! Ingredients: 1 small package lemon-flavored gelatin (I used a small package of sugar-free Jello.) 1 1/2 tablespoons sugar (You may substitute an artificial sweetener in place of the sugar.) 1 cup boiling water 1/4 cup cold water 2 tablespoons lemon juice (You may use freshly-squeezed lemon juice or bottle lemon juice.) 6-oz to 8-oz. carton lemon-flavored yogurt (I used 6-oz. “lite” lemon yogurt.) 8-oz container frozen whipped topping, thawed (I used 8-oz. fat-free whipped topping; it is also avaiable in the sugar-free variety.) 1 to 2 teaspoons grated lemon rind 9-oz. graham cracker crust–10-inch diameter (I used a reduced-fat “ready-to-serve” graham cracker crust.) whipped topping, grated lemon rind, lemon slices, for garnish In a large mixing bowl, combine a small package of lemon-flavored Jello, 1 1/2 tablespoons sugar, and 1 cup boiling water. Stir for a few minutes, until the gelatin dissolves. Stir in 1/4 cup cold water and 2 tablespoons lemon juice. Chill about an hour, or until the mixture is the consistency of unbeaten egg whites. Fold 6-oz. to 8-oz. lemon yogurt, 8 oz. thawed whipped topping, and 1 to 2 teaspoons lemon rind into gelatin mixture. Pour into crust. Chill at least 3 hours, or until firmly

In this video, Betty demonstrates how to make a sinfully rich, delightfully decadent dessert, Chocolate Turtle Dessert Pizza. It’s a mixture of everything you love–but it is not light on the calories! Ingredients; 16 oz. Nestle Toll House Brownie Bites cookie dough 1/2 recipe of cream cheese frosting (See Betty’s Fresh Fruit Pizza for the recipe, or used canned frosting.) 8 oz. caramel topping toppings–some combination of any of these: miniature marshmallows, semisweet chocolate chips, chopped pecans, white chocolate chips, peanut butter chips, milk chocolate chips, butterscotch chips, coconut, maraschino cherries, sliced almonds For garnish: Reddi-Wip stemmed maraschino cherries Separate the squares of brownie mix and place evenly in a pizza pan (or in a circle on a cookie sheet). Use your fingers to press the squares together, forming a complete circle. Place in a 350-degree oven, and bake about 11 to 15 minutes. (Do not over-bake.) Remove from oven and cool completely. (You may speed this up by placing the large brownie circle in a refrigerator, after it has cooled a bit.) When the brownie circle is cool, spread the cream cheese frosting over the top. Next, drizzle the caramel topping over the cream cheese frosting, using about half of the jar. The style is casual and approachable, with no tense lists of diet-related details or overly-complex recipes, and cooking techniques require little more than a working stove and a frying pan.

George Stella (along with pastry chef-wife Rachel) have developed a wide range of recipes designed to compliment Atkins and other low-carb diet regimens. Rather than relying on packaged convenience foods that meet these dietary standards, they focus on home-cooked meals that satisfy the demands of low carb life without tasting like they were baked up in a factory.
