Chocolate is America’s gift to the world – and it is certainly a gift that keeps on giving. But the form of chocolate we eat is a European epicurean delight!
Dating back to at least 1900 B.C., cacao beans were first enjoyed by the pre-Maya and Aztec peoples of Central America much as coffee is used: fermented, roasted, ground and used to make a bitter brew.
This chocolate beverage was extremely special to the Mayans and Aztecs, playing key roles on both religious events and to royalty – it is said that the great leader Montezuma drank 50-60 glasses of chocolate drink per day.
Any tribe in areas where the precious cacao beans can be grown that were conquered by the Aztecs was required to hand over the chocolaty beans as a tax.
Eventually the Europeans arrived on the scene. According to one chocolate expert, Christopher Columbus on his first discovery voyage to America was given cacao plants by native Americans who believed they were giving the strange visitor from across the ocean the gift of the gods.
Halfway home, Columbus opened one of the pods to find it filled with beans covered in slime, announced he was not taking such a worthless plant to Europe – and tossed every one of them overboard!
Fortunately, the Spanish learned the secret of using cocoa beans. It was the Europeans who added sugar and milk into the mix to make chocolate a staple for sweets and desserts.
Finally, Englishman John Cadbury created the emulsification process that makes the chocolate beverage into a solid, thus inventing the modern chocolate bar.
Even then, chocolate was the food of the gods and the very wealthy until the Industrial Revolution saw the invention of mass production that allowed chocolate to be manufactured in large quantities.
Today, you can enjoy chocolate daily!
And best of all, diabetics and those of us following a low carb diet can still savor the tasty treat with the creation of sugar free chocolate – a very welcome and much appreciated part of low carb desserts.
