In this Induction-friendly recipe video, I demonstrate one of the most versatile side dishes or main dishes on the Low Carb lifestyle. From Chinese main meal or accompaniment to an Italian replacement for pasta, this faux rice recipe is versatile to say the least. Note: for the Italian alternative, I would eliminate the Chinese flavorings (Soy Sauce, meat, sesame oil, and egg) in favor of more garlic and Italian seasoning and spices. For Induction, you are limited to 1 cup of Cauliflower per day. This recipe was developed from the original at Linda’s Low Carb recipe site. Here is a low calorie, low carb, P3 friendly recipe. IF you are craving carbs, then try this! It is GLUTEN FREE as well! 2 Tbsp Golden Milled Flax seed 1 Tbsp Milled Flax Seed 1 Tbsp Almond Flour (Meal) 1 Tbsp regular Cocoa 1 Tbsp Dark Cocoa 1 Tbsp Coconut Flakes (Unsweetened) 1 Tbsp sunflower seeds (roasted) 1 egg 3 Tbsp Almond Milk 3 Tbsp Oil (Coconut) 1 Tbsp Torani Sugar Free Hazelnut 10 packets Stevia 1 Tsp baking powder Dash of salt 1 Tbsp Sugar Free Caramel Torani Microwave for 4-5 minutes in a 1000 watt microwave. Fidget For Fitness’ Low Carb Cranberry Walnut Bread ½ c. coconut flour ½ c. almond flour 1 tsp. baking soda 1 tsp. baking powder 1 c. heavy cream 4 T. melted butter 4 eggs 1 T. grape seed oil 2 individual size packets of Splenda 1 T. vanilla extract A little less than 1 T. cinnamon ¼ tsp. nutmeg Pinch of salt ½ c chopped walnuts ½ c dried cranberries (you can add up to ¾ of a cup, depending on your taste – but the more you add, the higher the carb count. I think a 1/2 c. is fine) 8.5 inch loaf pan 1. Preheat oven to 350 degrees 2. Butter loaf pan on bottom and sides 3. In a large bowl combine coconut flour, almond flour, baking soda, baking powder, Splenda, salt, cinnamon and nutmeg 4. In medium bowl, beat 4 eggs. Add grape seed oil, buttermilk, heavy cream, melted butter, and vanilla, and whisk until well blended. 5. Pour wet ingredients into dry ingredients and mix with wooden spoon until batter is combined (don’t over mix) 6. Fold in walnuts and cranberries 7. LOW-CARB CHOCOLATE CUPCAKES WITH CREAMY FROSTING Ingredients for Cupcakes * 2 cups almond flour * 1 cup Splenda (or sweetener equivalent) * 6 Tablespoons butter * 1/8 teaspoon cream of tartar * 1 teaspoon Singing Dog Vanilla Extract * 5 eggs, separated * 2 teaspoons baking powder * 5 Tablespoons Ghiradelli Unsweetened Cocoa Instructions 1. Preheat oven to 325°F. 2. Whip egg whites with cream of tartar until stiff. In separate bowl, using electric mixer, cream butter with egg yolks until light yellow and fluffy. Add vanilla extract and Splenda. 3. Beat until well mixed. Add about 1/3 of whipped egg whites to the butter/egg yolk mixture and mix lightly. Fold the whole thing in to the whipped egg whites and fold lightly. 4. Add 1 cup of almond flour and fold lightly. Add remaining almond flour, baking powder and cocoa and fold thoroughly, being careful not to break down whites. Fill paper muffin cups in muffin tin about half full. 5. Bake at 325°F about 15 to 20 minutes until cracked on top. Ingredients for Frosting * 1 pkg Dixie Carb Counters Vanilla Pudding Mix * 8 ounces cream cheese * 1 cup heavy cream * 3 packets Splenda * Half ‘n Half (to thin to make spreadable if necessary) Instructions 1. Whip cream cheese in food processor or with electric mixer until smooth. Add cream and mix again briefly. Add pudding mix and Splenda and then mix well. In this video, Betty demonstrates how to make a luscious Light Lemon Pie. I substituted low fat/low sugar substitutes for almost every ingredient in this pie, yet it tastes indulgent and scrumptious! This is a great dessert if you are watching fat/sugar/calories! Ingredients: 1 small package lemon-flavored gelatin (I used a small package of sugar-free Jello.) 1 1/2 tablespoons sugar (You may substitute an artificial sweetener in place of the sugar.) 1 cup boiling water 1/4 cup cold water 2 tablespoons lemon juice (You may use freshly-squeezed lemon juice or bottle lemon juice.) 6-oz to 8-oz. carton lemon-flavored yogurt (I used 6-oz. “lite” lemon yogurt.) 8-oz container frozen whipped topping, thawed (I used 8-oz. fat-free whipped topping; it is also avaiable in the sugar-free variety.) 1 to 2 teaspoons grated lemon rind 9-oz. graham cracker crust–10-inch diameter (I used a reduced-fat “ready-to-serve” graham cracker crust.) whipped topping, grated lemon rind, lemon slices, for garnish In a large mixing bowl, combine a small package of lemon-flavored Jello, 1 1/2 tablespoons sugar, and 1 cup boiling water. Stir for a few minutes, until the gelatin dissolves. Stir in 1/4 cup cold water and 2 tablespoons lemon juice. Chill about an hour, or until the mixture is the consistency of unbeaten egg whites. In this Low Carb recipe video, I make one of the easiest breakfast ideas and perhaps one of the best recipes to bring to a potluck. It is a Low Carb Sausage Quiche with peppers and onions. This quiche is acceptable for Induction and latter phases. “Real men do eat quiche!” :-) Instructions: 1. Brown 1.5 pounds sausage 2. Sautee 2 Medium Peppers and 1 onion 3. Preheat Oven to 350 degrees 4. Beat 6 eggs and 1 cup Heavy Cream. Add 1 tsp Salt and .5 tsp pepper. Add 8 oz of cheese (your choice) 5. Grease 13×9 baking pan 6. Cover bottom of pan with Sausage/onion/pepper mixture. Pour Cream, Cheese, Egg mixture over top. 7. Bake for 40-45 minutes until slightly brown on top. I created a delicious LOW CARB, Gluten Free, Sugar-Free LASAGNA made with Almond Flour Crepes Fidget For Fitness’ Lasagna (Feel free to make this receipe, but if you are going to re-post it anywhere, please give Fidget For Fitness the proper credit for its copyright. Thank You) 1 Aluminum 8 x 11 Lasagna pan 12 -14 Almond Flour Crepes (recipe below) 2 lbs. Ground Sirloin 3-4 cups of spaghetti sauce (Homemade! No jar sauce allowed) 3 15 oz tubs (or one large 48 oz. tub) of Polly-O ORIGINAL Ricotta Cheese DRAINED for at least 8 hours (Do not use the Part-Skim or Old Fashioned Ricotta, it MUST be ORIGNIAL) 16 oz. Polly-O WHOLE MILK Mozzarella (do not use Part-Skim, it must be Whole Milk) Shredded ½ c. freshly grated Locatelli Pecorino Romano Cheese for the layers 3 T. of Locatelli Pecorino Romano Cheese for the top 1 egg Handful of chopped parsley leaves, no stems 1 tsp. salt ¼ tsp. fresh ground black pepper Olive Oil or Olive Oil Pam Cooking Spray 1. Drain Ricotta cheese by putting all the cheese in a large strainer with small holes (not a colander) over a bowl and cover with plastic wrap. Drain for at least 8 hours, turning it over several times with a spoon or spatula during draining time. 2. In large skillet, brown meat; drain. 3. Heat oven to 350°F. 4. In large bowl, stir together drained ricotta cheese, 14 oz. mozzarella cheese (saving some for the top), Locatelli cheese, egg, parsley, salt and pepper. 5. In honor of the coming of summer and my jones’ing for ice cream after running the Minneapolis Marathon last weekend (www.youtube.com I wanted to post one of the simplest low carb recipes I have ever come across. Unlike normal ice cream recipe, which have a lot of air beat into the cream mixture and can double the size, this recipe does not. It is therefore very rich and very good. While it might be listed as a single serving, you very well could share it. Pound the chicken until 1/4″ to 1/3″ even thickness. 4. Saute the chicken 1-2 minutes over medium-high heat on each side. 5. This is a recipe for almond cookies that are low-carb, sugar-free and gluten-free. Before you begin, pre-heat your oven to 300F. You’ll need: – 2 cups almond flour (ie ground almonds) – 1/2 cup Splenda (or equivalent liquid Splenda) – 1 stick (1/2 cup) butter – 1/2 tsp salt (omit if you used salted butter) – 1 tsp pure vanilla extract – 1 tsp pure almond extract Combine all ingredients. Form dough into walnut-sized balls and place onto greased cookie sheet. Bake for 5 minutes. Press down lightly with fork. (Optional: You may also place an almond in the middle of the cookie.) Return to oven and bake for another 15 minutes. Let cool and enjoy! 30 carbs for entire batch – less if you use liquid Splenda (ie Sweetzfree). Diet Update – Day 116 of Atkins Diet Today was the first day I had sugar in 116 days; made me feel sick. I went to a seafood buffet and had a great meal, but did indulge in desert for the first time. Since it was a buffet, I had a bite of several desserts. My reaction was immediate: First I got a sugar high, then I felt lightheaded and had a hard time walking from the restaurant to my car, by the time I got home I had a headache and started drinking water to flush my system. It was a really bad reaction and made me have no desire to do that to my body again. I really paid for breaking my diet rules, I felt awful.

It’s a mixture of everything you love–but it is not light on the calories! Ingredients; 16 oz. Nestle Toll House Brownie Bites cookie dough 1/2 recipe of cream cheese frosting (See Betty’s Fresh Fruit Pizza for the recipe, or used canned frosting.) 8 oz. caramel topping toppings–some combination of any of these: miniature marshmallows, semisweet chocolate chips, chopped pecans, white chocolate chips, peanut butter chips, milk chocolate chips, butterscotch chips, coconut, maraschino cherries, sliced almonds For garnish: Reddi-Wip stemmed maraschino cherries Separate the squares of brownie mix and place evenly in a pizza pan (or in a circle on a cookie sheet). Use your fingers to press the squares together, forming a complete circle. Place in a 350-degree oven, and bake about 11 to 15 minutes. (Do not over-bake.) Remove from oven and cool completely. (You may speed this up by placing the large brownie circle in a refrigerator, after it has cooled a bit.) When the brownie circle is cool, spread the cream cheese frosting over the top. Next, drizzle the caramel topping over the cream cheese frosting, using about half of the jar. In this long Quick Hits video, I discuss whether kids or teenagers (as my daughter oft reminds me) should follow the Atkins Diet as prescribed or a more moderate low carb or carb conscious plan. I respond by saying that for most teenagers a lower carb approach is probably best, especially not if the choice is not driven by the child themselves. I believe as parents we are called to teach our kids a healthy way of eating, and while acknowledging kids’ environment and choices, we should make and help them choose to eat wisely, which by almost any standard should not include “whites” – refined starches and sugars. There should be no requirement for breading or donuts to be healthy or happy. The challenge with kids and teenagers is therefore school lunch programs and their unhealthy nature. This is by no means a discouragement for teenagers, who may want to try Atkins Diet due to an internal desire to lose weight. I just want them to be aware of what their decision means.

Low Carb Chocolate “Mousse” / Chocolate Whipped Cream Dessert. Quick & Easy – 2 Minutes from start to finish. Fidget For Fitness’ Chocolate “Mousse” / Chocolate Whipped Cream Dessert 16 oz. heavy whipping cream 2 heaping T. Ghirardelli Unsweetened Baking Cocoa 2 ½ T. Granulated Splenda ½ T. Vanilla Extract (OPTIONAL– Do not add if you are on Induction) 4 Sliced Strawberries or Raspberries for garnishment (OPTIONAL — Do not add if you are on Induction or not up to the berry rung on OWL) 1. Put all heavy cream, cocoa, Splenda and Vanilla extract in Kitchen Aid with whisk attachment. 2. Whisk slowly for a few seconds until cocoa is incorporated 3. Just sharing some awesome recipes for Coffee flavored Choc Delight and seriously the best steak fajitas I have ever had. Beats any restaurant I have ever been to. If you are in P3 add Guac, sour cream, lots more cheese, and I personally add refried beans and have no scale troubles but, some would tell you that you cant have the refried beans. Just letting you know that I am able to get away with it. I also read the south beach diet from cover to cover and really learned so much about nutrition. I recommend everyone on this Protocol read that book. I think the knowledge that I gained from that book was what has enabled me to go outside the protocol and make smart decisions about what I eat while on HCG and of course watching other people on Youtube experiment and then try for myself. video. Here is my breakfast Low Carb cooking video where I make my favorite low carb pancake recipe. This isn’t Induction friendly due to the Baking mix, but you could substitute some almond flour to make it Extended Induction legal. (There is an understanding by some Dr. A said they (nuts) could be added after 14 days.) Here’s the recipe: * 8oz pkg cream cheese * 3 eggs * 3 tsp Splenda or equivalent liquid Splenda * 1/4 cup Atkins Bake Mix *recipe below * 1/2 tsp baking powder * 1/2 tsp vanilla * 1/4 cup Heavy Cream or buttermilk Beat cream cheese with mixer until blended smooth. Add the remaining ingredients, and let sit for 5 minutes. Preheat non-stick pan to med/high heat. Spray pan with non stick spray and use 1/4 cup measure per pancake. Yield 10 pancakes.
